It took six months of trials and errors to develop the final recipe for my bourbon glaze. While there are other bourbon glazes out there, none really resonated with me. I often wondered what type of bourbon was being used and how much. It seems that adding just a drop of any old bourbon could qualify it as a bourbon glaze. My glaze may be on the pricey side, but I use a substantial amount of bourbon to create a one-gallon batch. This batch yields about 17 to 18 finished half-pints or approximately 7 to 8 pints.
Maelstrom's Select Reserve Bourbon Glaze is a true micro-batch artisanal glaze made with Wood Hat Spirits Bloody Dapper bourbon. This Bloody Butcher Red Corn/Wheat bourbon features a warm, complex, spicy profile that complements the pepper spice blend used in the glaze. The result is a rich and flavorful glaze that pairs well with a wide variety of dishes. A small amount goes a long way—try it on blackened salmon or even a scoop of vanilla ice cream!
