Maelstrom’s Select Reserve Bourbon Glaze
Six months of trials and error is what it took to come up with the final recipe for my bourbon glaze. Yes, there is some out there but nothing really hit home with me. On top of that I wondered what bourbon and how much was actually being used. Add one drop of any old bourbon and hey you have a bourbon glaze! Sure the glaze I make is pricey but hey I’m pretty much using an entire fifth of bourbon to make a one gallon batch of this stuff. A one gallon batch makes 17 maybe 18 finished half pints or 7 maybe 8 pints. I also make it a point to specifically name the bourbon used in all of my bourbon glazes.
Maelstrom’s Select Reserve Bourbon Glaze is a true micro batch artisanal glaze made with Wood Hat Spirits Bloody Dapper bourbon. This Bloody Butcher Red Corn/Wheat Bourbon is characterized with a warm complex spicy palate which plays well with the pepper spice blend used in the glaze. The result is a pleasingly rich and spicy glaze that goes well with just about anything you’d care to put it on. A little goes a long way. Try some on blackened salmon or a scoop of vanilla ice cream.
